lb. lean ground beef
1 envelope of Taco Seasoning Mix
1 can Tomatoes With Chili Peppers
1/4 Cup Mexican Blend Shredded Cheese
¼ cup French Fried Onions
head of lettuce

Cook
the ground beef in a pot until done.
Drain. Add taco seasoning and
tomatoes. Bring to a boil and then turn
down to simmer until most of the liquid has cooked out, stirring
frequently. Divide the lettuce into 6
plates, add beef and top with any liquids left in the pot, sprinkle with cheese
and French fried onions. Serves 6.
Comment: I was making chili and knew I couldn’t stay
on my diet if I ate all of those beans, so I decided to make myself some Taco
Salad. It turned out delicious and would
have been even better if I had added a big scoop of sour cream but didn’t think
about it at the time.
And this is a
cheap dish to make. The ground beef is about $4.00 lb. on sale,
the seasoning runs about $1.00 a package or buy store brand and get it cheaper,
a head of lettuce has been running about $1.50, the can of tomato with peppers
was a store brand that cost $1.00 and the cheese and onions were left over from
another meal. That brings the total cost
to about $7.50 or about $1.25 per serving.
And if you want to make it into chili instead of taco salad just
eliminate the lettuce and add 2 cans of kidney beans which when buying store
brands can run anywhere from $1.50 to $2.00 per can keeping the price per meal
about the same.
